I am a Certified Executive Chef and have owned/worked with many knives over the course of my 40 year career, these knives are fantastic!
I have had the 8" chef and almost 4" pairing knives for over 2 years. They keep their edge and are a dream to sharpen when necessary. I like them so much I purchased 2 sets to gift colleagues this Christmas.
I'm hoping to see a 10" and 12" chef knife and maybe a boning and filet knife added to their line up someday...I will buy them all!
